Ingredients
- Chickpeas: 2 cans (15 oz/425 g each), drained and rinsed
- Olive oil: 2 tbsp
- Cajun seasoning: 2 tsp
- Smoked paprika: 1/2 tsp
- Salt: 1/4 tsp
- Black pepper: 1/4 tsp
- Vegan BBQ sauce: 1/2 cup (120 ml)
- Flour tortillas or wraps: 4 large (use gluten-free if desired)
- Lettuce: 1 cup (60 g), shredded
- Carrots: 1 cup (120 g), julienned
- Red bell pepper: 1 small, thinly sliced
- Cucumber: 1 small, thinly sliced
- Red onion: 1 small, thinly sliced
- Avocado: 1 ripe, sliced
- Vegan ranch or creamy dressing: 1/4 cup (60 ml), optional
- Fresh cilantro or parsley: chopped, optional
Instructions
- Sauté Chickpeas:
- Heat olive oil in a large skillet over medium heat. Add drained chickpeas and sauté for 2-3 minutes.
- Add Seasonings:
- Sprinkle Cajun seasoning, smoked paprika, salt, and black pepper over the chickpeas. Stir and cook for another 2 minutes until fragrant.
- Add BBQ Sauce:
- Pour in the BBQ sauce and cook for 3-4 minutes, stirring frequently, until the chickpeas are coated and slightly caramelized. Remove from heat.
- Warm Tortillas:

- Add Dressing and Herbs:
