Ingredients
- Smoked sausage (Andouille or kielbasa): 350 g (12 oz), sliced into 1 cm rounds
- Onion: 1 medium, diced
- Red bell pepper: 1, diced
- Green bell pepper: 1, diced
- Celery stalks: 2, diced
- Garlic cloves: 3, minced
- Long-grain white rice: 200 g (1 cup), rinsed
- Low-sodium chicken broth: 500 ml (2 cups)
- Canned diced tomatoes: 400 g (14 oz), drained
- Cajun seasoning: 1 ½ tsp
- Smoked paprika: ½ tsp
- Dried thyme: ¼ tsp
- Dried oregano: ¼ tsp
- Salt: ½ tsp (adjust to taste)
- Black pepper: ¼ tsp
- Cayenne pepper: Pinch (optional)
- Olive oil: 2 tbsp
- Fresh parsley: 2 tbsp, chopped (for garnish)
- Spring onions: 2, sliced (optional, for garnish)
Instructions
- Brown the sausage:
- In a large skillet, heat olive oil over medium-high heat. Add sausage slices and cook until browned, about 4 minutes. Remove sausage to a plate and set aside.
- Sauté vegetables:
- Add onion, red bell pepper, green bell pepper, and celery to the skillet. Sauté for 4 minutes until softened.
- Add garlic:
- Stir in garlic and cook for 1 minute, stirring frequently.
- Add rice:
- Add rinsed rice, stir, and cook for 1 minute to lightly toast.
- Add liquids and seasonings:
- Pour in diced tomatoes and chicken broth. Add Cajun seasoning, smoked paprika, thyme, oregano, salt, black pepper, and cayenne. Mix well.
- Simmer:
- Return sausage to skillet. Bring to a simmer.
- Cook:
- Reduce heat to low, cover, and cook for 18 minutes until rice is tender and liquid is absorbed. Stir occasionally.
- Rest and fluff:
- Remove from heat. Keep covered and let rest for 5 minutes, then fluff rice with fork.
- Garnish and serve:
- Top with chopped parsley and sliced spring onion before serving.
