I first made these Mango BBQ Chicken Tortilla Stacks for a summer gathering. The combination of smoky spiced chicken with sweet mango salsa stacked between crisp tortillas was a hit, and everyone loved the tropical twist on classic barbecue flavors.
Ingredients
- Chicken & Marinade: 2 boneless, skinless chicken breasts, 1 tbsp olive oil, 1 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp salt, 1/4 tsp black pepper
- Mango Salsa: 1 large ripe mango (peeled and diced), 1/4 cup red onion (finely chopped), 1/2 red bell pepper (diced), 1 small jalapeño (seeded and minced), 2 tbsp fresh cilantro (chopped), Juice of 1 lime, 1/4 tsp salt
- Tortilla Stack: 8 small flour tortillas (6-inch), 1 cup shredded cheddar or Monterey Jack cheese (optional), 1 cup BBQ sauce (divided), 2 tbsp olive oil for brushing
Instructions
- Grill Chicken:
- Preheat grill or grill pan to medium-high heat. In a bowl, toss chicken breasts with olive oil, smoked paprika, garlic powder, salt, and black pepper. Let marinate for 10 minutes, then grill for 5–7 minutes per side until cooked through. Let rest for 5 minutes, then slice thinly.
- Prepare Mango Salsa:
- In a medium bowl, combine mango, red onion, bell pepper, jalapeño, cilantro, lime juice, and salt. Mix gently and set aside.
- Crisp Tortillas:
- Preheat oven to 400°F (200°C). Brush both sides of tortillas with olive oil and place on baking sheet. Bake for 3–4 minutes per side until lightly crisped but still pliable.
- Assemble Stacks:
- Place 1 tortilla on each plate or tray. Spread 2 tbsp BBQ sauce, top with sliced chicken, a spoonful of mango salsa, and cheese (if using). Top with another tortilla and repeat layers, finishing with salsa and cheese.
- Bake & Serve:
- Return assembled stacks to oven for 4–5 minutes, until cheese melts and stacks are heated through. Garnish with extra cilantro and serve immediately.
