Ingredients
- All-purpose flour: 2 cups (250 g)
- Baking powder: 1 teaspoon
- Salt: 1/4 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground nutmeg: 1/2 teaspoon
- Eggs: 2 large
- Granulated sugar: 2/3 cup (130 g)
- Vegetable oil: 1/4 cup (60 ml)
- Pure vanilla extract: 1 teaspoon
- Almond extract: 1/2 teaspoon
- Dried cranberries: 1/2 cup (70 g)
- Unsalted shelled pistachios, roughly chopped: 1/2 cup (60 g)
- Sliced almonds: 1/3 cup (40 g)
- Chopped dried apricots: 1/3 cup (50 g)
Instructions
- Prep Oven:
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Mix Dry Ingredients:
- In a medium bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
- Mix Wet Ingredients:
- In a large bowl, beat eggs and sugar until pale and slightly thickened. Add oil, vanilla, and almond extract, mixing well.
- Combine Mixtures:
- Gradually stir dry ingredients into wet mixture until just combined.
- Add Fruits and Nuts:
- Fold in dried cranberries, pistachios, almonds, and dried apricots.
- Shape Dough:
- Divide dough in half. With lightly floured hands, shape each half into a log about 12 inches (30 cm) long and 2 inches (5 cm) wide on the prepared sheet.
- First Bake:
- Bake 20–22 minutes, until logs are lightly golden and firm. Remove and cool for 10 minutes.
- Reduce Heat:
- Lower oven temperature to 300°F (150°C).
- Slice:
- With a sharp serrated knife, slice logs diagonally into 1/4-inch (0.6 cm) thins. Lay slices cut side down on sheet.
- Second Bake:
- Bake for 8–10 minutes, flip, and bake another 8–10 minutes until crisp and lightly golden.
- Cool:
- Cool completely on wire rack before storing airtight.
