Instructions

- Prepare avocado:
- Slice avocado and lightly mash in a bowl seasoning with a pinch of salt and chili flakes if using.
- Assemble quesadillas:
- Lay out tortillas sprinkle half the cheddar on one side top with scrambled eggs mashed avocado cilantro (if using) and remaining cheddar then fold tortillas over filling.
- Cook quesadillas:
- Wipe out skillet return to medium heat cook quesadillas one at a time about 2 3 minutes per side until golden and cheese is melted.
- Slice and serve:
- Transfer cooked quesadillas to a cutting board let cool slightly then cut into wedges and serve warm with salsa sour cream or hot sauce if desired.
