I made these peanut butter flax granola squares during a busy school week, and they were a huge hit with my family. The combination of toasted oats and creamy peanut butter makes them irresistible.
Ingredients
- Old-fashioned rolled oats: 2 cups
- Ground flaxseed: 1/2 cup
- Chopped roasted peanuts: 1/4 cup
- Unsweetened shredded coconut (optional): 1/4 cup
- Salt: 1/4 teaspoon
- Creamy peanut butter: 1/2 cup
- Honey or maple syrup: 1/3 cup
- Coconut oil (or unsalted butter): 2 tablespoons
- Vanilla extract: 1 teaspoon
Instructions
- Prep the pan:
- Preheat the oven to 350°F (175°C). Line an 8x8-inch (20x20 cm) baking pan with parchment paper, leaving an overhang for easy removal.
- Mix dry ingredients:
- In a large mixing bowl, combine the oats, ground flaxseed, chopped peanuts, shredded coconut (if using), and salt.
- Melt wet ingredients:
- In a small saucepan over low heat, combine the peanut butter, honey, and coconut oil. Stir until melted and smooth. Remove from heat and stir in vanilla extract.
- Combine mixtures:
- Pour the wet mixture over the dry ingredients. Mix thoroughly until everything is evenly coated.
- Press into pan:
- Transfer the mixture to the prepared pan. Using a spatula or your hands, press the mixture firmly and evenly into the pan.
- Bake:
- Bake for 18–20 minutes, or until lightly golden at the edges.
- Cool and cut:
- Let cool completely in the pan on a wire rack. Once cool, lift out using the parchment overhang and cut into 16 squares.
