Ingredients
- Mangoes: 2 ripe, peeled and diced
- Ricotta cheese: 1 cup (250 g)
- Heavy cream (for ricotta): 1/2 cup (120 ml)
- Powdered sugar: 2 tbsp
- Vanilla extract: 1 tsp
- Granulated sugar (for caramel): 1/2 cup (100 g)
- Unsalted butter (for caramel): 2 tbsp
- Heavy cream (for caramel): 1/4 cup (60 ml)
- Sea salt (for caramel): Pinch
- Chopped pistachios (optional): 2 tbsp
- Fresh mint leaves (optional): For garnish
Instructions
- Prepare Ricotta Layer:
- Combine ricotta, heavy cream, powdered sugar, and vanilla extract in a mixing bowl. Whip until smooth and creamy, then refrigerate.
- Make Caramel Sauce:
- Heat granulated sugar in a small saucepan over medium heat, stirring until melted and golden. Add butter, stir until melted, remove from heat. Whisk in cream and sea salt, then let cool.
- Dice Mangoes:
- Dice mangoes and reserve a few pieces for garnish if desired.
- Assemble Parfaits:
- Layer ricotta mixture, diced mango, and caramel sauce in serving glasses. Repeat layers and finish with caramel.
- Garnish and Serve:
- Top with pistachios and mint leaves if using. Serve immediately or chill for 2 hours.
