Ingredients
- Sweet Potatoes: 2 medium sweet potatoes (about 500 g), peeled and cubed
- Parmesan Cheese: 1/2 cup (50 g) freshly grated Parmesan cheese
- Butter: 2 tablespoons unsalted butter, melted
- Egg: 1 large egg
- All-purpose Flour: 1/3 cup (40 g)
- Cornstarch: 1/4 cup (30 g)
- Garlic: 2 cloves garlic, minced
- Sea Salt: 1/2 teaspoon fine
- Black Pepper: 1/4 teaspoon
- Dried Italian Herbs: 1/2 teaspoon (optional)
- Fresh Parsley: 2 tablespoons chopped (optional)
- Extra Parmesan Cheese: For serving (optional)
Instructions
- Prepare Sweet Potatoes:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Cook and Mash:
- Boil sweet potato cubes in salted water until fork-tender, about 10–12 minutes. Drain and let cool slightly. Mash sweet potatoes until smooth. Let cool for 5 more minutes.
- Add Mix-ins:
- Add Parmesan, melted butter, egg, minced garlic, salt, pepper, and Italian herbs (if using). Mix until well combined.
- Make Dough:
- Stir in flour and cornstarch. Mix to form a soft, slightly sticky dough.
- Shape Puffs:
- With lightly floured hands, roll heaping tablespoons of dough into balls and place on prepared baking sheet (makes about 24 balls).
- Bake:
- Bake for 25–30 minutes, flipping halfway, until golden and crisp.
- Serve:
- Cool slightly. Sprinkle with chopped parsley and extra Parmesan if desired. Serve warm.
