Place pineapple chunks, full-fat coconut milk, maple syrup or honey, vanilla extract, and a pinch of salt in a blender. Blend until the mixture is completely smooth.

Taste the blended mixture and adjust the sweetness as desired by adding more maple syrup or honey if needed.

If you desire added texture, stir in unsweetened shredded coconut.

Pour the mixture evenly into popsicle molds, leaving a small space at the top to allow for expansion during freezing.

Insert popsicle sticks and freeze the molds for at least 4 hours, or until the popsicles are fully solid.

To release the popsicles, briefly run warm water over the outside of the molds and gently remove. Serve immediately.
