Pineapple Coconut Popsicles (Print Version)

Tropical pineapple and creamy coconut combine for a cool, refreshing frozen treat, perfect for summer days.

# Ingredients:

→ Fruits

01 - 2 cups fresh pineapple chunks, or canned pineapple chunks, drained

→ Coconut Mixture

02 - 1 cup full-fat coconut milk, well-shaken
03 - 3 tablespoons maple syrup or honey, to taste
04 - 1 teaspoon vanilla extract
05 - Pinch of salt

→ Optional

06 - 2 tablespoons unsweetened shredded coconut

# Steps to Follow:

01 - Place pineapple chunks, full-fat coconut milk, maple syrup or honey, vanilla extract, and a pinch of salt in a blender. Blend until the mixture is completely smooth.
02 - Taste the blended mixture and adjust the sweetness as desired by adding more maple syrup or honey if needed.
03 - If you desire added texture, stir in unsweetened shredded coconut.
04 - Pour the mixture evenly into popsicle molds, leaving a small space at the top to allow for expansion during freezing.
05 - Insert popsicle sticks and freeze the molds for at least 4 hours, or until the popsicles are fully solid.
06 - To release the popsicles, briefly run warm water over the outside of the molds and gently remove. Serve immediately.

# Additional Notes:

01 - For a creamier consistency, always use full-fat coconut milk.
02 - Agave syrup can be used as an alternative sweetener.
03 - A squeeze of fresh lime juice adds brightness and tang.
04 - Sprinkle toasted coconut on top before serving for added flavor and crunch.
