Grilled Corn Ribs Snack (Print Version)

Sweet corn quartered and grilled with smoky spices, delivering a flavorful, fun snack or side for any occasion.

# Ingredients:

→ Corn

01 - 4 large ears fresh corn

→ Seasoning

02 - 2 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 1 teaspoon garlic powder
05 - 0.5 teaspoon ground cumin
06 - 0.5 teaspoon chili powder
07 - 1 teaspoon kosher salt
08 - 0.5 teaspoon freshly ground black pepper

→ Garnish (optional)

09 - 2 tablespoons chopped fresh cilantro
10 - 1 lime, cut into wedges
11 - 2 tablespoons grated Parmesan or vegan cheese (optional)

# Steps to Follow:

01 - Remove the husks from the corn and cut each ear lengthwise into four quarters, creating rib-like strips. Use a sharp knife and apply firm, steady pressure to ensure clean cuts.
02 - In a large bowl, whisk together olive oil, smoked paprika, garlic powder, ground cumin, chili powder, kosher salt, and black pepper until well combined.
03 - Add the corn ribs to the bowl and toss thoroughly to evenly coat each piece with the seasoned oil mixture.
04 - Heat the grill to medium-high heat, ensuring the grates are clean and lightly oiled to prevent sticking.
05 - Arrange the seasoned corn ribs kernel side down on the hot grill. Cook for 12 to 15 minutes, turning occasionally, until the corn is deeply charred and the edges begin to curl.
06 - Transfer the grilled corn ribs to a serving platter. Garnish with chopped cilantro, lime wedges, and your choice of grated cheese or vegan cheese. Serve immediately while hot.

# Additional Notes:

01 - Add a pinch of cayenne pepper to the seasoning if you prefer more spicy heat.
02 - Corn ribs can be cooked in an air fryer at 200°C for 10–12 minutes as an alternative to grilling.
03 - Enhance with a drizzle of chipotle mayo or yogurt sauce when serving.
04 - For a dairy-free dish, select vegan cheese in place of Parmesan.
