Cucumber Roll-Ups Low-Carb Snack (Print Version)

Fresh cucumber slices wrapped around creamy cheese and deli meats for a light, crunchy snack low in carbs.

# What You’ll Need:

→ Vegetables

01 - 1 large English cucumber

→ Dairy

02 - 4 oz cream cheese, softened

→ Deli Meats

03 - 4 oz sliced turkey breast or ham

→ Seasonings & Extras

04 - 1 tbsp fresh chives, finely chopped
05 - 1 tbsp fresh dill, finely chopped
06 - 0.5 tsp garlic powder
07 - Salt and pepper, to taste

→ Optional Fillings

08 - 1 small red bell pepper, julienned
09 - 1 small avocado, sliced
10 - 1 tbsp everything bagel seasoning

# How to Make It:

01 - Wash the cucumber and trim the ends. Using a mandoline slicer or vegetable peeler, slice the cucumber lengthwise into long, thin strips. Pat dry with a paper towel.
02 - In a small bowl, combine cream cheese, chives, dill, garlic powder, salt, and pepper until smooth and well blended.
03 - Lay cucumber strips on a clean surface and spread a thin layer of the seasoned cream cheese along each strip.
04 - Place a slice of deli meat atop the cream cheese, adding red bell pepper or avocado slices if desired.
05 - Carefully roll each cucumber strip into a tight spiral with the seam side down on a serving platter. Sprinkle with everything bagel seasoning if using. Serve immediately or chill for 15 minutes for firmer texture.

# Additional Tips::

01 -
  • No cooking required, just fresh ingredients you probably have in your fridge right now.
  • They disappear fast at parties, and people are always surprised there's no bread or carbs involved.
  • Perfect for those afternoons when you want something crunchy and satisfying without the guilt.
02 -
  • Patting the cucumber completely dry is non-negotiable—wet slices won't hold the cheese or roll tightly.
  • Don't overthink the filling amount; too much cream cheese or deli meat makes rolling frustrating and tears your cucumber.
03 -
  • A sharp knife and a steady hand matter less than patience—roll slowly and let the spiral form naturally without forcing it.
  • If you don't have fresh herbs, this falls apart; they're what transform creamy and meaty into something worth talking about.
