# How to Make It:
01 - Preheat oven to 350°F. Line two baking sheets with parchment paper.
02 - In a large mixing bowl, beat together cottage cheese, softened butter, and 1 cup sugar until smooth and creamy using an electric mixer or whisk.
03 - Add egg and vanilla extract to the creamed mixture. Mix until fully incorporated.
04 - In a separate medium bowl, whisk together flour, cream of tartar, baking soda, baking powder, and salt.
05 - Gradually add dry ingredients to wet mixture, stirring until just combined. Avoid overmixing.
06 - In a small bowl, combine 1/4 cup sugar and 2 teaspoons cinnamon.
07 - Scoop tablespoon-sized portions of dough and roll into balls. Roll each ball in the cinnamon sugar mixture until fully coated.
