cloud eggs blue cheese bacon (Print Version)

Whipped egg whites, blue cheese, and bacon create a light, flavorful dish for an elevated morning meal.

# What You’ll Need:

→ Eggs

01 - 2 large eggs

→ Cheese & Bacon

02 - 2 tablespoons blue cheese, crumbled
03 - 2 slices bacon, cooked until crisp and crumbled

→ Seasonings and Garnish

04 - 1/8 teaspoon freshly ground black pepper
05 - Pinch sea salt
06 - 1 tablespoon chives, finely chopped (optional, for garnish)

# How to Make It:

01 - Preheat the oven to 200°C. Line a baking sheet with parchment paper.
02 - Separate the egg whites from the yolks, keeping yolks whole and placing each into a small separate bowl.
03 - In a clean mixing bowl, whisk the egg whites with a pinch of salt using an electric mixer or whisk until stiff peaks form.
04 - Gently fold the crumbled blue cheese and most of the crumbled bacon into the whipped egg whites, saving a portion of bacon for topping.
05 - Spoon the egg white mixture onto the prepared baking sheet in two equal mounds. Create a shallow well in the center of each using the spoon's back.
06 - Bake the egg whites for 3 minutes until lightly set.
07 - Carefully slide one yolk into the well of each baked egg white cloud.
08 - Return to the oven and bake an additional 3–4 minutes, until the yolks are just set but remain runny.
09 - Remove from the oven. Top with reserved bacon, freshly ground black pepper, and chives. Serve immediately.

  • Ideal for gluten free and low carb diets
  • Looks fancy but is surprisingly easy to make
02 -
  • Be sure not to get any yolk in the whites or they will not whip up properly
  • Use room temperature eggs for easier separation and better volume
  • Fold in the cheese and bacon gently with a spatula so the whipped whites do not deflate
