01 - Preheat the oven to 200°C. Line a baking sheet with parchment paper.
02 - Separate the egg whites from the yolks, keeping yolks whole and placing each into a small separate bowl.
03 - In a clean mixing bowl, whisk the egg whites with a pinch of salt using an electric mixer or whisk until stiff peaks form.
04 - Gently fold the crumbled blue cheese and most of the crumbled bacon into the whipped egg whites, saving a portion of bacon for topping.
05 - Spoon the egg white mixture onto the prepared baking sheet in two equal mounds. Create a shallow well in the center of each using the spoon's back.
06 - Bake the egg whites for 3 minutes until lightly set.
07 - Carefully slide one yolk into the well of each baked egg white cloud.
08 - Return to the oven and bake an additional 3–4 minutes, until the yolks are just set but remain runny.
09 - Remove from the oven. Top with reserved bacon, freshly ground black pepper, and chives. Serve immediately.
