01 - 2 packages instant ramen noodles, seasoning discarded

02 - 2 large eggs
03 - 0.5 cup grated Parmesan cheese, plus extra for garnish
04 - 0.25 cup heavy cream
05 - 1 tablespoon unsalted butter
→ Meats (optional)
06 - 3 slices bacon or pancetta, diced (omit for vegetarian option)
→ Flavor & Seasoning
07 - 2 cloves garlic, minced
08 - 0.5 teaspoon freshly ground black pepper
09 - Salt, to taste
10 - 1 tablespoon chopped fresh parsley (optional, for garnish)
# How to Make It:
01 - Boil a medium pot of water and cook ramen noodles according to package directions without seasoning packets. Drain, reserving 0.25 cup of cooking water, and set noodles aside.
02 - Whisk together eggs, grated Parmesan, heavy cream, and freshly ground black pepper until smooth in a mixing bowl.
03 - In a large skillet over medium heat, cook diced bacon or pancetta until crispy. Remove from skillet and reserve 1 tablespoon of rendered fat. If omitting meat, add butter instead.
04 - Add unsalted butter and minced garlic to the skillet and sauté for 30 seconds until fragrant.
05 - Add cooked ramen noodles to the skillet and toss thoroughly to coat with the butter and garlic mixture.
06 - Remove skillet from heat and immediately pour in the egg and cheese mixture, tossing quickly to enrobe the noodles in a creamy sauce. Add reserved cooking water one tablespoon at a time as needed to loosen the sauce consistency.
07 - Stir in crispy bacon or pancetta if used, and season with salt to taste.
08 - Plate the noodles and garnish with additional Parmesan and chopped fresh parsley if desired. Serve immediately.
