# What You’ll Need:

→ Chicken & Breading

01 - 2 boneless, skinless chicken breasts
02 - 1 cup all-purpose flour
03 - 2 large eggs, beaten
04 - 1 cup breadcrumbs
05 - 1 teaspoon Italian seasoning
06 - Salt and pepper to taste
07 - Olive oil for frying

→ Sandwich Assembly

08 - 1 cup vodka sauce
09 - 1 cup shredded mozzarella cheese
10 - 4 slices Italian or ciabatta bread
11 - Fresh basil leaves for garnish

# How to Make It:

01 - Flatten chicken breasts to even thickness using a meat mallet.
02 - Season both sides of chicken with salt, pepper, and Italian seasoning.
03 - Arrange three bowls with flour, beaten eggs, and breadcrumbs respectively.
04 - Dredge each chicken breast in flour, dip in eggs, and coat thoroughly with breadcrumbs, pressing gently to adhere.
05 - Heat approximately 0.5 inch of olive oil in a large skillet over medium heat until shimmering.
06 - Fry chicken breasts for 5-7 minutes per side until golden brown and cooked through. Transfer to paper towels to drain.
07 - In a small saucepan, gently heat vodka sauce over low heat, stirring occasionally.
08 - Lightly toast bread slices until golden and crispy.
09 - Place each fried chicken breast on a slice of toasted bread and spoon generous amount of warm vodka sauce over chicken.
10 - Sprinkle shredded mozzarella cheese on top and cover briefly with lid or foil to allow cheese to melt slightly.
11 - Garnish with fresh basil leaves and top with second bread slice to complete sandwich.
12 - Serve immediately while hot.

# Additional Tips::

01 -
  • The chicken stays impossibly crisp while the cheese gets melty and the sauce soaks into every bite without making it soggy.
  • It feels indulgent enough for when you want to impress someone, but honestly it's easy enough that you'll make it on random Thursdays just for yourself.
  • Vodka sauce has this subtle richness that transforms breaded chicken into something that tastes way more sophisticated than the effort involved.
02 -
  • Don't skip draining the fried chicken on paper towels because any excess oil will make the sandwich greasy and sad.
  • If your bread isn't sturdy enough, you'll end up eating this with a fork, which is fine but not the point of a sandwich.
  • Room temperature vodka sauce cools down your whole sandwich, so make sure it's actually hot before you assemble.
03 -
  • Panko breadcrumbs give you maximum crunch and they stay crispy longer than regular breadcrumbs.
  • If you have time, let the breaded chicken sit in the fridge for 15 minutes before frying; the coating adheres better and stays on instead of flaking off in the oil.
