Vegan Sweet Potato Black Bean (Print Version)

01 - 4 slices whole grain bread
02 - 1/2 cup vegan cheddar cheese
03 - 1/2 cup roasted sweet potato cubes
04 - 1/2 cup cooked black beans
05 - 2 tablespoons vegan butter

# How to Make It:

01 - Roast or reheat sweet potato cubes until tender, if not already cooked.
02 - Evenly distribute vegan cheddar, roasted sweet potato cubes, and black beans between two slices of bread. Top with remaining bread slices.
03 - Spread vegan butter on outer sides of each sandwich. Place sandwiches in a heated pan over medium heat.
04 - Cook each side for 3 to 4 minutes, pressing gently, until bread is golden and filling is hot and cheese is melted.
