07 - 1/4 cup creamy peanut butter
08 - 2 tablespoons soy sauce

11 - 1 tablespoon honey or maple syrup
12 - 1 teaspoon toasted sesame oil
13 - 1 small garlic clove, finely minced
14 - 1 teaspoon fresh ginger, grated
15 - 1–2 tablespoons warm water, to thin dressing as needed
16 - 1/2 teaspoon red pepper flakes or sriracha (optional)
# How to Make It:
01 - In a large mixing bowl, place the thinly sliced cucumbers, julienned carrot, red onion, and chopped cilantro. Toss gently to mix.
02 - In a medium bowl, whisk together peanut butter, soy sauce, rice vinegar, lime juice, honey (or maple syrup), toasted sesame oil, garlic, and grated ginger until smooth. Gradually add warm water, one tablespoon at a time, until the mixture reaches a pourable consistency. Optionally, stir in red pepper flakes or sriracha for heat.
03 - Pour the prepared dressing over the mixed vegetables and toss gently to coat evenly.
04 - Sprinkle chopped roasted peanuts and sesame seeds on top. Serve immediately or chill for up to 30 minutes to enhance crispness.
