→ Garnishes (optional)

17 - Chopped cilantro
18 - Sliced jalapeños
19 - Shredded Monterey Jack cheese

# How to Make It:

01 - Place boneless skinless chicken breasts or thighs in an even layer at the bottom of the slow cooker.
02 - Add diced yellow onion, minced garlic, diced green chilies, red bell pepper, and drained beans over the chicken along with chicken broth.
03 - Sprinkle ground cumin, dried oregano, chili powder, ground coriander, cayenne pepper (if using), salt, and black pepper evenly over all ingredients.
04 - Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours, until chicken is thoroughly cooked and tender.
05 - Remove chicken pieces and shred using two forks. Return shredded chicken to the slow cooker.
06 - Add sour cream and cream cheese. Stir until both are completely melted and fully incorporated into the chili.
07 - Taste and adjust seasoning as needed. Serve hot, topped with desired garnishes such as cilantro, jalapeños, shredded cheese, or lime wedges.

# Additional Tips:

01 - For a silkier consistency, blend 1 cup of the beans with 1/2 cup of chicken broth before adding to the slow cooker.
02 - Rotisserie chicken can be substituted for a quicker preparation; reduce cook time to 2 hours on low to allow flavors to meld.
03 - For a dairy-free version, omit sour cream and cream cheese or use plant-based alternatives.
