Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Remove the outer leaves from the cauliflower and trim the stem, keeping the core intact.

Slice the cauliflower into 3/4-inch thick steaks. You'll get about 2–3 full steaks; the rest will break into florets — roast those too!

Place the cauliflower steaks and florets onto the prepared baking sheet.

Brush both sides with olive oil and sprinkle with garlic powder, smoked paprika, cumin, salt, and pepper.

Roast for 15–20 minutes, flip carefully, and roast for another 10–15 minutes until tender and golden brown.

Garnish with chopped parsley before serving.
