# Additional Tips::

01 -
  • Ready in under 25 minutes, which means dinner can happen even on chaotic evenings.
  • Naturally gluten-free without any weird substitutions or compromises on flavor.
  • Endlessly customizable—use what's in your fridge and nobody will know you improvised.
  • Crispy base stays crispy even as the cheese melts, creating an unexpectedly satisfying texture.
02 -
  • Don't skimp on the parchment paper—once, I tried without it and spent fifteen minutes scraping cheese off my baking sheet while cursing my impatience.
  • Moisture is your enemy here; if your toppings release liquid while baking, the rice cake gets soggy instead of staying crispy, so pat mushrooms and peppers dry first.
03 -
  • Toast your rice cakes for two minutes before adding toppings if you want them extra crispy and less prone to absorbing sauce moisture.
  • Scatter toppings with intention, leaving a quarter-inch border around the edges so the rice cake stays structurally sound and doesn't get top-heavy.
