Pistachio White Chocolate Bark (Print Version)

Creamy white chocolate studded with chopped pistachios, cranberries, and apricots. Ready in under an hour.

# What You’ll Need:

→ Chocolate

01 - 14 oz high-quality white chocolate, chopped

→ Nuts

02 - 2.8 oz shelled pistachios, roughly chopped

→ Dried Fruit

03 - 2 oz dried cranberries, chopped
04 - 1.4 oz dried apricots, chopped

# How to Make It:

01 - Line a baking sheet with parchment paper to prevent sticking and ensure easy removal of the finished bark.
02 - Place the chopped white chocolate in a heatproof bowl. Melt gently over a pan of barely simmering water using a double boiler method, stirring occasionally until completely smooth. Alternatively, microwave in 30-second intervals, stirring thoroughly between each burst, until fully melted and glossy.
03 - Pour the melted chocolate onto the prepared baking sheet. Use a spatula to spread it evenly into a rectangle approximately 0.4 inch thick, ensuring uniform thickness for consistent setting.
04 - Immediately sprinkle the chopped pistachios, cranberries, and apricots evenly over the surface of the melted chocolate. Gently press the toppings into the chocolate with the spatula to ensure proper adhesion.
05 - Allow the bark to set at room temperature for 1 hour, or refrigerate for 20 to 30 minutes until completely firm and set throughout.
06 - Break or cut the bark into pieces and store in an airtight container at room temperature for up to 2 weeks or refrigerate for extended freshness.

# Additional Tips::

01 -
  • The contrast between silky white chocolate and crunchy pistachios is absolutely addictive
  • It comes together in under 15 minutes but looks like you spent hours crafting something special
  • You can customize the dried fruits based on what you have or what season it is
02 -
  • White chocolate seizes easily, so keep water away from the melting chocolate at all costs
  • Work quickly once the chocolate is melted or your toppings will not stick properly
  • If the bark is too hard to break, let it sit at room temperature for 5 minutes first
03 -
  • Toast your pistachios in a dry pan for 3 minutes before chopping to deepen their flavor
  • If using the microwave, stir every 20 seconds rather than waiting for the full 30-second interval
