01 - In a medium bowl, blend shredded cheddar, softened cream cheese, mayonnaise, pimentos, garlic powder, smoked paprika, cayenne if using, and a pinch of salt and black pepper until smooth and cohesive. Set aside.
02 - In a large bowl, gently combine ground beef with Worcestershire sauce, salt, and black pepper. Divide the mixture into 8 equal portions and shape each into thin patties roughly 10 cm in diameter.
03 - Spoon a generous tablespoon of the pimento cheese mixture onto the center of 4 patties. Cover each with a remaining patty and seal the edges thoroughly to encase the filling. Gently reshape into thick, uniform burgers.
04 - Heat grill or grill pan to medium-high. Lightly oil the grates to prevent sticking.
05 - Cook the burgers for approximately 6–7 minutes per side, or until the beef is fully cooked and the cheese has melted inside.
06 - Place burger buns cut side down on the grill and toast for about 1 minute, if desired.
07 - Layer burgers with lettuce, tomato, red onion, and pickles as preferred. Serve immediately while hot.
