01 -  In a large mixing bowl, add rolled oats, peanut butter, honey, vanilla extract, ground flaxseed if using, and a pinch of salt. 
 02 -  Stir thoroughly with a spatula or spoon until the ingredients are evenly combined and the mixture becomes sticky. 
 03 -  Gently fold in the mini chocolate chips to distribute them throughout the mixture. 
 04 -  Portion the mixture and roll into 2.5 cm balls using your hands or a small cookie scoop. 
 05 -  Place the balls onto a tray or plate lined with parchment paper. Refrigerate for at least 30 minutes to allow them to firm up. 
 06 -  Transfer the set bites to an airtight container and store in the refrigerator for up to one week.
