# How to Make It:
01 - Preheat oven to 350°F. Combine flour, oats, brown sugar, cinnamon, and salt in a small bowl. Cut in cold butter until mixture is crumbly. Spread evenly on a baking sheet and bake for 8 to 10 minutes until golden. Allow to cool.
02 - In a medium saucepan, combine peaches, brown sugar, cinnamon, and lemon juice over medium heat. Simmer 4 to 5 minutes until juices release. Stir in cornstarch and cook 1 to 2 minutes until thickened. Remove from heat.
03 - In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt. In another bowl, whisk buttermilk, egg, melted butter, and vanilla extract. Add wet ingredients to dry and stir gently until just combined.
04 - Heat a nonstick skillet over medium heat and grease with cooking spray or butter. Pour ¼ cup batter for each pancake. Cook 2 to 3 minutes until bubbles form, then flip and cook an additional 1 to 2 minutes. Aim for small, medium-thick pancakes.
05 - Immediately drape each hot pancake over a rolling pin or thick utensil handle to form a taco shape. Allow to cool in this position for 2 to 3 minutes to set the shape.
06 - Fill each pancake taco with peach filling. Generously sprinkle with streusel topping. Optionally, garnish with whipped cream or vanilla ice cream and fresh mint leaves. Serve immediately.
