If the mirabelle plums are not already frozen, wash, pit, and cut them into halves or quarters. Spread on a tray and freeze for at least 4 hours, preferably overnight.

Place the frozen mirabelle plums, maple syrup, almond extract, and lemon juice into a high-powered blender or food processor.

Blend on high speed until the mixture is smooth and creamy, pausing to scrape down the sides as needed. If the mixture is difficult to blend or too thick, add cold water or fruit juice, one tablespoon at a time, until the sorbet achieves a smooth consistency.

Serve immediately for a soft sorbet texture, or transfer to a freezer-safe airtight container and freeze for 1 to 2 hours for a firmer result.
