Meatloaf with Gravy (Print Version)

A hearty, tender blend of beef and pork smothered in rich brown gravy — the ultimate comfort food for family dinners.

# Ingredients:

→ Meatloaf

01 - 680 g ground beef (80/20)
02 - 225 g ground pork
03 - 1 small onion, finely chopped
04 - 2 garlic cloves, minced
05 - 120 ml milk
06 - 180 ml breadcrumbs
07 - 2 large eggs
08 - 2 tbsp Worcestershire sauce
09 - 1 tbsp Dijon mustard
10 - 1 tsp dried thyme
11 - 1 tsp salt
12 - 1/2 tsp black pepper
13 - 2 tbsp ketchup (for topping)

→ Gravy

14 - 2 tbsp butter
15 - 2 tbsp all-purpose flour
16 - 350 ml beef broth
17 - 1 tsp Worcestershire sauce
18 - Salt and pepper, to taste

# Steps to Follow:

01 - Preheat oven to 190°C. Line a baking sheet or loaf pan with parchment paper.
02 - In a large bowl, combine ground beef, ground pork, onion, garlic, milk, breadcrumbs, eggs, Worcestershire sauce, mustard, thyme, salt, and pepper. Mix just until combined, avoiding overmixing.
03 - Shape the mixture into a loaf on the prepared baking sheet or pack into a loaf pan. Spread ketchup evenly on top if using.
04 - Bake for 55-60 minutes, or until internal temperature reaches 71°C. Let rest for 10 minutes before slicing to retain juices.
05 - While the meatloaf rests, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes to create a roux.
06 - Gradually whisk in beef broth and Worcestershire sauce. Simmer, stirring continuously, until thickened (about 5-7 minutes). Season to taste with salt and pepper.
07 - Slice the rested meatloaf and serve with warm gravy poured over the top.

01 - For added moisture, mix in 60 g grated carrot or zucchini into the meat mixture.
02 - Pairs well with mashed potatoes or roasted vegetables.
