01 -
Preheat oven to 190°C. Line a baking sheet or loaf pan with parchment paper.
02 -
In a large bowl, combine ground beef, ground pork, onion, garlic, milk, breadcrumbs, eggs, Worcestershire sauce, mustard, thyme, salt, and pepper. Mix just until combined, avoiding overmixing.
03 -
Shape the mixture into a loaf on the prepared baking sheet or pack into a loaf pan. Spread ketchup evenly on top if using.
04 -
Bake for 55-60 minutes, or until internal temperature reaches 71°C. Let rest for 10 minutes before slicing to retain juices.
05 -
While the meatloaf rests, melt butter in a saucepan over medium heat. Whisk in flour and cook for 1-2 minutes to create a roux.
06 -
Gradually whisk in beef broth and Worcestershire sauce. Simmer, stirring continuously, until thickened (about 5-7 minutes). Season to taste with salt and pepper.
07 -
Slice the rested meatloaf and serve with warm gravy poured over the top.
