Set oven to 200°C (400°F) and allow to preheat fully.

Combine cherry tomatoes, zucchini, red bell pepper, yellow bell pepper, and minced garlic on a large baking tray. Drizzle with 2 tablespoons olive oil, season with salt and pepper, and toss to coat evenly.

Move vegetables to the edges of the tray, creating space in the center. Place salmon fillets centrally on the tray.

Drizzle remaining olive oil and lemon juice over salmon fillets. Season with additional salt and black pepper as needed.

Bake in the preheated oven for 20-25 minutes until the salmon is opaque and flakes easily when tested with a fork.

Remove from oven and sprinkle with chopped fresh parsley before serving.
