Lemon Garlic Salmon Tray Bake (Print Version)

Salmon, garlic, lemon, and vegetables bake together for an easy Mediterranean-inspired main course in one tray.

# What You’ll Need:

→ Proteins

01 - 4 salmon fillets (approximately 170 g each)

→ Vegetables

02 - 2 cups cherry tomatoes, halved
03 - 1 zucchini, sliced
04 - 1 red bell pepper, chopped
05 - 1 yellow bell pepper, chopped
06 - 4 cloves garlic, minced

→ Seasonings

07 - 4 tablespoons olive oil
08 - Juice of 2 lemons
09 - Salt, to taste
10 - Black pepper, to taste
11 - Fresh parsley, chopped, for garnish

# How to Make It:

01 - Set oven to 200°C (400°F) and allow to preheat fully.
02 - Combine cherry tomatoes, zucchini, red bell pepper, yellow bell pepper, and minced garlic on a large baking tray. Drizzle with 2 tablespoons olive oil, season with salt and pepper, and toss to coat evenly.
03 - Move vegetables to the edges of the tray, creating space in the center. Place salmon fillets centrally on the tray.
04 - Drizzle remaining olive oil and lemon juice over salmon fillets. Season with additional salt and black pepper as needed.
05 - Bake in the preheated oven for 20-25 minutes until the salmon is opaque and flakes easily when tested with a fork.
06 - Remove from oven and sprinkle with chopped fresh parsley before serving.
