Vanilla ice cream and chewy cookies join forces in this frozen dessert layered with fun toppings and easy assembly.

# Ingredients:

→ Cookies

01 - 16 soft chocolate chip cookies, approximately 7–8 cm in diameter, homemade or store-bought

→ Ice Cream

02 - 1 liter vanilla ice cream, slightly softened

→ Optional Toppings

03 - 100 g mini chocolate chips
04 - 100 g rainbow sprinkles
05 - 100 g chopped nuts, such as peanuts or pecans

# Steps to Follow:

01 - If using homemade cookies, ensure they are completely cooled before beginning assembly.
02 - Line a baking sheet with parchment paper or a silicone mat.
03 - Place 8 cookies, flat side up, evenly spaced on the prepared baking sheet.
04 - Scoop approximately 60–75 g of softened vanilla ice cream onto the flat side of each cookie.
05 - Gently press a second cookie, flat side down, onto the ice cream to create a sandwich.
06 - Roll the edges of each sandwich in mini chocolate chips, rainbow sprinkles, or chopped nuts as desired.
07 - Place the assembled sandwiches back on the baking sheet and freeze for at least 1 hour or until firm.
08 - Serve immediately after freezing or wrap each sandwich in parchment paper and store in the freezer for up to 1 month.
