If using homemade cookies, ensure they are completely cooled before beginning assembly.

Line a baking sheet with parchment paper or a silicone mat.

Place 8 cookies, flat side up, evenly spaced on the prepared baking sheet.

Scoop approximately 60–75 g of softened vanilla ice cream onto the flat side of each cookie.

Gently press a second cookie, flat side down, onto the ice cream to create a sandwich.

Roll the edges of each sandwich in mini chocolate chips, rainbow sprinkles, or chopped nuts as desired.

Place the assembled sandwiches back on the baking sheet and freeze for at least 1 hour or until firm.
