High Protein Oats Eggs (Print Version)

Protein-rich oats topped with scrambled eggs and Greek yogurt - easy make-ahead breakfast for busy mornings.

# What You’ll Need:

→ Oats

01 - 2 cups rolled oats
02 - 3 cups water or milk of choice
03 - 1/4 teaspoon salt (optional)

→ Eggs

04 - 8 large eggs
05 - 1/4 teaspoon black pepper
06 - 1/4 teaspoon salt
07 - 1 tablespoon olive oil or butter

→ Yogurt

08 - 1 cup plain Greek yogurt

→ Optional Toppings

09 - 1/2 cup fresh berries or sliced banana
10 - 2 tablespoons chopped nuts or seeds
11 - 1 tablespoon honey or maple syrup

# How to Make It:

01 - In a medium saucepan, combine oats, water (or milk), and salt. Bring to a boil, then reduce heat and simmer for 5–7 minutes, stirring occasionally, until oats are creamy and cooked. Remove from heat and let cool slightly.
02 - While oats are cooking, crack eggs into a bowl. Add salt and pepper, then whisk until well combined.
03 - Heat olive oil or butter in a nonstick skillet over medium heat. Add eggs and scramble gently until just set, about 3–4 minutes. Remove from heat.
04 - Divide cooked oats evenly among 4 meal prep containers. Top each portion with scrambled eggs.
05 - Add 1/4 cup Greek yogurt to each container, either on the side or as a topping.
06 - Add desired optional toppings (berries, nuts, honey) just before serving, or pack separately.
07 - Let cool, then seal containers and refrigerate for up to 4 days. Enjoy cold, or reheat oats and eggs gently in the microwave before adding yogurt and toppings.

# Additional Tips::

01 -
  • This is my not-so-secret hack for breezing through busy mornings with energy that actually lasts.
  • The combination of creamy oats, pillow-soft eggs, and tangy yogurt never gets old—and doubles as a powerhouse of protein.
02 -
  • Don&apost add the yogurt before reheating—I learned the hard way that warm yogurt just isn&apost right.
  • Let the oats cool before sealing or condensation will leave everything a little soggy.
03 -
  • Whisk the eggs thoroughly for the fluffiest scramble, and don&apost overcook them since they&apoll be reheated later.
  • A sprinkle of cinnamon or a dash of vanilla in the oats quietly transforms the whole dish into something special.
