07 - 1 tbsp honey or maple syrup
08 - 1 tsp vanilla extract

09 - 1 cup fresh or frozen blueberries

10 - 1 tbsp coconut oil or butter

# How to Make It:

01 - In a large bowl, whisk together oat flour, protein powder, baking powder, and salt.
02 - In a separate bowl, beat the eggs, then whisk in milk, honey (or maple syrup), and vanilla extract.
03 - Pour the wet ingredients into the dry ingredients and stir until just combined (do not overmix).
04 - Gently fold in the blueberries.
05 - Heat a nonstick skillet or griddle over medium heat and add a little coconut oil or butter.
06 - Pour about 1/4 cup of batter per pancake onto the skillet. Cook for 2–3 minutes, until bubbles form on the surface and edges look set.
07 - Flip and cook for another 1–2 minutes, until golden brown and cooked through.
08 - Repeat with the remaining batter, adding more oil as needed.
