Healthy Chocolate Coconut Bites (Print Version)

Naturally sweetened coconut treats dipped in dark chocolate. Easy no-bake snack ready in 40 minutes.

# What You’ll Need:

→ Coconut Mixture

01 - 2 cups unsweetened shredded coconut
02 - 3 tablespoons coconut oil, melted
03 - 3 tablespoons maple syrup
04 - 1 teaspoon vanilla extract

→ Chocolate Coating

05 - 1 cup dark chocolate chips (dairy-free if needed)

# How to Make It:

01 - Line a baking sheet with parchment paper and set aside for later use.
02 - Place shredded coconut, melted coconut oil, maple syrup, and vanilla extract in a food processor. Pulse until the mixture becomes sticky and holds together when pressed.
03 - Scoop approximately 1 tablespoon of the coconut mixture and shape into compact balls. Arrange the formed bites on the prepared baking sheet.
04 - Transfer the baking sheet to the freezer and chill for 20 to 25 minutes until the bites are firm to the touch.
05 - While bites chill, place dark chocolate chips in a microwave-safe bowl. Microwave in 20-second intervals, stirring thoroughly between each burst, until completely smooth.
06 - Remove bites from freezer and dip each frozen piece into melted chocolate for full coating, or drizzle chocolate over the top. Return coated bites to the baking sheet.
07 - Refrigerate or freeze for an additional 10 minutes until the chocolate coating is completely set.
08 - Store finished bites in an airtight container in the refrigerator for up to 10 days or freeze for up to 2 months.

# Additional Tips::

01 -
  • They satisfy that afternoon chocolate craving without the sugar crash that usually follows
  • The texture is incredibly satisfying, like eating a candy bar that actually loves you back
  • Everything comes together in one food processor, so cleanup is almost nonexistent
02 -
  • Frozen coconut bites are much easier to dip than room temperature ones, so don't rush the freezing step
  • If your chocolate seizes while melting, whisk in a tiny bit more coconut oil to smooth it out again
  • These keep beautifully for weeks, which is good because you'll want to always have some on hand
03 -
  • Wet your hands slightly before rolling to keep the coconut mixture from sticking to your palms
  • Work quickly once the chocolate is melted, as it will start to set up in the bowl
