Hearty ground beef, fluffy rice, and colorful veg for quick, nutritious meal-prep bowls.

# What You’ll Need:

→ Proteins

01 - 1 lb (450 g) lean ground beef

→ Grains

02 - 2 cups cooked white or brown rice

→ Vegetables

03 - 1 red bell pepper, diced
04 - 1 cup broccoli florets
05 - 1 cup carrot slices
06 - 1 cup snap peas, trimmed

→ Aromatics & Seasoning

07 - 2 cloves garlic, minced
08 - 1 tablespoon fresh ginger, grated (optional)
09 - 2 tablespoons soy sauce (or tamari for gluten-free)
10 - 1 tablespoon olive oil
11 - ½ teaspoon black pepper
12 - Salt to taste

→ Garnish (optional)

13 - 2 tablespoons chopped scallions
14 - 1 teaspoon sesame seeds

# How to Make It:

01 - Cook rice according to package instructions. Set aside and keep warm.
02 - Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spatula, until browned and cooked through (about 6–7 minutes). Drain excess fat if needed.
03 - Add minced garlic and ginger to the beef. Sauté for 1–2 minutes until fragrant.
04 - Stir in soy sauce, black pepper, and salt. Mix well, then transfer beef to a plate and set aside.
05 - In the same skillet, add bell pepper, broccoli, carrots, and snap peas. Sauté for 5–7 minutes until just tender but still vibrant.
06 - Return the beef to the skillet and toss with vegetables until combined and heated through.
07 - Divide cooked rice among 4 meal prep containers. Top each with the beef and vegetable mixture.
08 - Garnish with scallions and sesame seeds if desired. Allow to cool before sealing containers and refrigerating.

# Additional Tips::

01 -
  • Meal prep has never been this rewarding: soothing to make, exciting to open later.
  • It lets fresh veggies shine while the beef delivers pure comfort, every time.
02 -
  • Don&rsquot rush the beef–crowding the pan turns it gray instead of caramelized and flavorful.
  • Mixing soy sauce with veggies in the pan once took my meal from bland to deeply savory.
03 -
  • Let each component cool before sealing to keep textures lively, not limp.
  • A drizzle of toasted sesame oil makes everything taste like takeout, with none of the mystery.
