Grilled Watermelon Vegan Feta Salad (Print Version)

# Ingredients:

01 - 1 small seedless watermelon, cut into 2.5 cm cubes (approximately 6 cups)
02 - 1 large English cucumber, diced
03 - 60 ml fresh mint leaves, torn
04 - 60 ml fresh basil leaves, torn

→ Vegan Cheese

05 - 180 ml vegan feta cheese, crumbled

→ Dressing

06 - 45 ml extra-virgin olive oil
07 - 15 ml fresh lime juice
08 - 5 ml agave syrup or maple syrup
09 - 2.5 ml sea salt
10 - 1.25 ml freshly ground black pepper

→ Garnish (optional)

11 - Zest of 1 lime
12 - Flaky sea salt

# Steps to Follow:

01 - Preheat a grill or grill pan over medium-high heat.
02 - Lightly brush the watermelon cubes with 15 ml of olive oil.
03 - Grill the watermelon cubes for 2 to 3 minutes per side until charred and caramelized at the edges. Remove from grill and let cool slightly.
04 - In a large mixing bowl, combine the grilled watermelon, diced cucumber, crumbled vegan feta, mint, and basil.
05 - In a small bowl, whisk together the remaining olive oil, lime juice, agave syrup, sea salt, and black pepper.
06 - Pour the dressing over the salad mixture and gently toss until evenly coated.
07 - Transfer the salad to a serving platter. Garnish with lime zest and a sprinkle of flaky sea salt if desired. Serve immediately.
