Preheat a grill or grill pan to medium-high heat.

Brush the cut side of each peach half with melted coconut oil and a light coating of maple syrup.

Place peaches cut side down on the hot grill. Grill for 3 to 4 minutes until caramelised and marked. Flip and grill the skin side for another 2 to 3 minutes. Remove from heat and set aside to cool slightly.

Scoop the solidified coconut cream from the chilled can into a mixing bowl, reserving or discarding the liquid as desired.

Add the powdered sugar and vanilla extract to the coconut cream. Whip with a hand mixer or whisk until light and fluffy. Taste and adjust sweetness as needed.

Arrange grilled peaches on serving plates, top with a generous dollop of coconut whip, and sprinkle with chopped pistachios. Serve immediately.
