01 - In a small bowl, combine softened butter, minced garlic, and chopped parsley until evenly mixed.
02 - Spread the garlic butter mixture evenly onto one side of each bread slice. Place shredded mozzarella between two bread slices, buttered sides facing out, to form a sandwich. Repeat for the second sandwich.
03 - Heat a skillet over medium heat. Place sandwiches in the skillet and grill for 3-4 minutes per side until bread is golden brown and cheese is fully melted.
