# How to Make It:
01 - Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
02 - Add chopped spinach to the skillet and cook, stirring frequently, until wilted, about 2 minutes. Season with salt and black pepper. Remove from heat and let cool slightly.
03 - In a bowl, mix the sautéed spinach with crumbled feta cheese and shredded mozzarella cheese if using until evenly combined.
04 - Arrange bread slices on a flat surface. Spread the spinach and cheese mixture evenly over two slices, then top each with a remaining bread slice.
05 - Spread softened butter on the exterior sides of each sandwich.
06 - Heat a clean skillet or griddle over medium-low heat. Place sandwiches in the pan and cook 3 to 4 minutes per side, pressing lightly, until golden brown and cheese is melted.
07 - Remove sandwiches from the skillet, let rest for 1 minute, then slice and serve warm.
