Feta Spinach Grilled Cheese (Print Version)

Golden grilled cheese layered with garlicky spinach and tangy feta for a flavorful bite.

# What You’ll Need:

→ Vegetables

01 - 2 cups fresh spinach, chopped
02 - 1 garlic clove, minced

→ Dairy

03 - 1/2 cup crumbled feta cheese
04 - 1/2 cup shredded mozzarella cheese (optional)
05 - 2 tablespoons unsalted butter, softened

→ Bread

06 - 4 thick slices country-style or sourdough bread

→ Seasonings

07 - 1 tablespoon olive oil
08 - 1/4 teaspoon black pepper
09 - Pinch of salt (optional)

# How to Make It:

01 - Heat olive oil in a skillet over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
02 - Add chopped spinach to the skillet and cook, stirring frequently, until wilted, about 2 minutes. Season with salt and black pepper. Remove from heat and let cool slightly.
03 - In a bowl, mix the sautéed spinach with crumbled feta cheese and shredded mozzarella cheese if using until evenly combined.
04 - Arrange bread slices on a flat surface. Spread the spinach and cheese mixture evenly over two slices, then top each with a remaining bread slice.
05 - Spread softened butter on the exterior sides of each sandwich.
06 - Heat a clean skillet or griddle over medium-low heat. Place sandwiches in the pan and cook 3 to 4 minutes per side, pressing lightly, until golden brown and cheese is melted.
07 - Remove sandwiches from the skillet, let rest for 1 minute, then slice and serve warm.

# Additional Tips::

01 -
  • The salty feta cuts through rich melted cheese like a flavor bomb
  • It transforms lunch into something that feels restaurant special but takes 20 minutes
02 -
  • Medium low heat prevents burning the bread before the cheese melts through
  • Squeezing excess moisture from the spinach prevents soggy bread disasters
03 -
  • Mayo instead of butter on the outside creates an even crispier crust
  • A panini press eliminates the need for flipping and makes uniform grill marks
