# How to Make It:
01 - Toast the whole grain bread slices until golden and crisp.
02 - Place a nonstick skillet over medium heat and lightly coat with oil or cooking spray if desired.
03 - Pour the egg whites into the hot skillet, season with a pinch of salt and black pepper, and cook, stirring gently, until just set and fluffy, about 2 to 3 minutes; remove from heat.
04 - Halve and pit the avocado, scoop the flesh into a bowl, add the lemon juice and a pinch of salt, then mash lightly with a fork to maintain some texture.
05 - Spread the mashed avocado evenly over each toasted slice of bread.
06 - Divide the warm egg whites between the two avocado-topped slices, then sprinkle with chili flakes and chopped fresh herbs if using and drizzle a little olive oil to taste.
07 - Serve immediately while the egg whites are warm and the toast remains crisp.
