A speedy meal featuring an ultra-crispy tortilla base with classic toppings and melted cheese.

# What You’ll Need:

→ Base

01 - 2 large flour tortillas (8–10 inch)

→ Sauce

02 - 1/3 cup tomato sauce or pizza sauce

→ Cheese

03 - 3/4 cup shredded mozzarella cheese

→ Toppings

04 - 1/4 cup sliced black olives
05 - 1/4 cup sliced cherry tomatoes
06 - 1/4 small red onion, thinly sliced
07 - 1/4 cup baby spinach leaves
08 - 1/2 teaspoon dried oregano
09 - 1 tablespoon extra virgin olive oil

→ Optional

10 - Pinch of red pepper flakes
11 - Fresh basil leaves, for garnish

# How to Make It:

01 - Preheat the oven to 425°F and place a baking sheet inside to heat.
02 - Place tortillas on parchment paper and lightly brush both sides with olive oil.
03 - Spread tomato sauce evenly over each tortilla, leaving a 1/2-inch border around the edges.
04 - Sprinkle shredded mozzarella cheese evenly over the tomato sauce.
05 - Distribute the sliced black olives, cherry tomatoes, red onion, and baby spinach over the cheese.
06 - Sprinkle dried oregano and, if desired, red pepper flakes over the assembled tortillas.
07 - Transfer the tortillas on parchment paper onto the preheated baking sheet and bake for 8 to 10 minutes, until edges are golden and cheese is melted.
08 - Remove from oven, let cool for one minute, garnish with fresh basil if desired, then slice and serve.

# Additional Tips::

01 -
  • Ready in 20 minutes from fridge to plate, no yeast tantrums required.
  • The tortilla gets impossibly crispy while staying tender enough to fold, a texture you can't get any other way.
  • Your toppings stay exactly where you put them instead of sliding around like a traditional pizza.
02 -
  • The parchment paper isn't just convenient—it prevents sticking and lets the tortilla bottom crisp without burning, which is the hardest part to get right.
  • Don't skip preheating the baking sheet; a cold sheet means the bottom stays chewy instead of shattering when you bite it.
03 -
  • For maximum crispiness, place the tortilla directly on the oven rack instead of the baking sheet—just watch carefully so the edges don't char and crumbs don't fall into your oven.
  • Make two pizzas at once to save yourself from eating the first one alone and then immediately making another.
