Combine white vinegar, water, sugar, and salt in a small saucepan. Bring to a simmer and stir until the sugar dissolves. Pour the hot liquid over the sliced red onion in a bowl and let stand for at least 15 minutes.

Slice halloumi into 1 cm thick pieces.

Heat a non-stick skillet over medium heat. Add halloumi slices and cook for 3–4 minutes per side until golden and crisp. Sprinkle smoked paprika and cumin over the cheese during cooking.
