Preheat oven to 220°C and line a baking sheet with parchment paper.

Cut the avocados in half, remove pits, and slice into even wedges.

In one bowl, combine panko breadcrumbs with salt and pepper. Place the flour in a second bowl. In a third bowl, whisk the eggs until fully beaten.

Dredge each avocado wedge in flour, dip in the beaten eggs, then coat with panko mixture. Arrange the coated slices evenly on the prepared baking sheet.

Bake for 12–15 minutes, or until the coating is golden and crisp.

Combine honey and red pepper flakes in a small saucepan over low heat. Stir until the honey is warmed through and infused.

Remove avocado slices from the oven and plate. Drizzle immediately with warm hot honey before serving.
