Creamy Cajun Chicken Alfredo Corn (Print Version)

# Ingredients:

→ Chicken & Seasoning

01 - 2 boneless chicken breasts
02 - 2 tablespoons Cajun seasoning
03 - 1 tablespoon olive oil
04 - Salt, to taste
05 - Black pepper, to taste

→ Pasta & Sauce

06 - 300 grams penne pasta
07 - 2 tablespoons butter
08 - 3 cloves garlic, minced
09 - 200 millilitres heavy cream
10 - 100 grams grated Parmesan cheese
11 - 100 millilitres milk
12 - Salt, to taste
13 - Black pepper, to taste

→ Roasted Corn

14 - 1 large ear of corn or 1 cup frozen corn
15 - 1 teaspoon olive oil

→ Toppings

16 - Handful of crushed tortilla chips
17 - Fresh parsley, chopped (optional)

# Steps to Follow:

01 - Boil the penne pasta in a large pot of salted water until al dente. Drain thoroughly and set aside.
02 - Season both sides of the chicken breasts with Cajun seasoning, salt, and black pepper. Heat olive oil in a skillet over medium heat. Sear the chicken until cooked through, about 6–7 minutes per side. Remove from heat, let rest for several minutes, then slice thinly.
03 - If using fresh corn, brush the kernels with olive oil and grill or pan-roast over medium-high heat until lightly charred. If using frozen corn, sauté in olive oil until golden and aromatic.
04 - In a saucepan, melt the butter over medium heat. Sauté the minced garlic for 1 minute until fragrant. Pour in the heavy cream and milk, then simmer for 3 minutes. Stir in the grated Parmesan cheese until melted. Season with salt and black pepper to taste.
05 - Gently toss the cooked penne with the Alfredo sauce until evenly coated. Add the sliced Cajun chicken and roasted corn. Transfer to serving plates and garnish with crushed tortilla chips and chopped parsley as desired.
