In a mixing bowl, combine cottage cheese, all-purpose flour, baking powder, and salt. Mix thoroughly until a cohesive dough forms.

Add olive oil for extra moisture if desired and knead gently until the dough becomes smooth.

Section the dough into 4 equal portions and shape each into a ball.

Roll each dough ball into a disc approximately 0.6 centimetres thick using a rolling pin.

Preheat a non-stick skillet over medium heat. Cook each flatbread for 3–4 minutes per side, or until golden brown on both sides.

Remove flatbreads from the skillet and allow to cool slightly before serving.
