In a shallow dish or mixing bowl, whisk together eggs, milk, vanilla, cinnamon, sugar (if using), and salt until smooth.

Heat a skillet or griddle over medium heat and add a bit of butter or oil to coat the surface.

Dip each slice of bread into the custard mixture, soaking briefly on both sides.

Place soaked bread onto the hot skillet. Cook for 2–3 minutes per side, or until golden brown and cooked through.
