# Ingredients:

01 - 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces

05 - 1 green bell pepper, sliced
06 - 1 yellow bell pepper, sliced
07 - 10-12 hot cherry peppers, halved
08 - 1 lb yellow or white potatoes, peeled and cubed

09 - 1 cup chicken broth
10 - 1 tbsp olive oil

→ Seasonings

11 - 1 tsp dried oregano
12 - 1 tsp dried basil
13 - Salt, to taste
14 - Black pepper, to taste
15 - Fresh parsley, chopped for garnish (optional)

# Steps to Follow:

01 - Season the chicken pieces with salt, pepper, oregano, and basil.
02 - Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add the seasoned chicken and brown on all sides. Remove chicken from the pan and set aside.
03 - Add the chopped onion to the pan and cook until softened, about 3-5 minutes. Add the minced garlic and cook for 1 minute until fragrant.
04 - Add the sliced bell peppers and halved hot cherry peppers. Cook for 5 minutes, until peppers are slightly tender. Add the cubed potatoes and stir to combine. Cook for 3-5 minutes.
05 - Return the browned chicken to the pan. Pour in the chicken broth, ensuring it partially covers the ingredients. Bring to a simmer, then reduce heat to low, cover and cook for 20-25 minutes, or until chicken is fully cooked and potatoes are tender.
06 - Remove from heat, let it rest for a few minutes. Garnish with fresh parsley before serving, if desired. Serve hot.
