# What You’ll Need:

01 - 8 oz (225 g) raw shrimp, peeled, deveined, finely chopped
02 - 1 cup (90 g) scallions, finely sliced
03 - 2 oz (60 g), about 1/2 cup cream cheese, softened
04 - 1/2 cup (60 g) shredded mozzarella cheese
05 - 1 tablespoon soy sauce
06 - 1 teaspoon toasted sesame oil
07 - 1/2 teaspoon freshly grated ginger
08 - 1 small garlic clove, minced
09 - 1/4 teaspoon ground white pepper
10 - 1/2 teaspoon salt

11 - 24 round dumpling wrappers

12 - 1 tablespoon neutral oil (for optional pan-frying)

# How to Make It:

01 - Combine chopped shrimp, scallions, cream cheese, mozzarella, soy sauce, sesame oil, ginger, garlic, white pepper, and salt in a mixing bowl. Mix thoroughly until evenly incorporated.
02 - Place one dumpling wrapper on a clean surface. Spoon approximately 1 tablespoon of filling into the center.
03 - Lightly moisten the edge of the wrapper with water. Fold in half and pleat or pinch the edges together, sealing tightly and pressing out any air. Repeat until all wrappers and filling are used.
04 - To steam: Arrange dumplings in a parchment-lined or lightly greased steamer basket, leaving space between each. Steam over simmering water for 6 to 8 minutes, until wrappers turn translucent and filling is cooked through. To pan-fry: Heat neutral oil in a large non-stick skillet over medium-high heat. Place dumplings flat-side down, cooking for 2 minutes until bottoms are golden. Add 3 tablespoons water, cover, and steam for 4 to 5 minutes until cooked through and liquid has evaporated.
05 - Serve hot with soy sauce, chili oil, or vinegar as desired.
