# Ingredients:

→ For the Filling

01 - 1 lb ground beef
02 - 1/2 small yellow onion, diced
03 - 3/4 tsp salt
04 - 1/4 tsp black pepper
05 - 1/2 cup shredded cheddar cheese (plus more for topping)
06 - 4 large flour tortillas

→ Burger Sauce

07 - 1/4 cup mayonnaise
08 - 2 tbsp ketchup
09 - 1 tbsp dill pickle juice
10 - 1 tsp soy sauce
11 - 1 tsp rice vinegar
12 - 1/2 tsp paprika
13 - 1/2 tsp garlic powder

→ Optional Toppings

14 - Dill pickle slices
15 - Chopped lettuce
16 - Sliced tomatoes

# Steps to Follow:

01 - In a large skillet over medium-high heat, cook the ground beef, breaking it up as it browns.
02 - Drain any excess grease. Add diced onion, salt, and pepper. Cook until onion softens, about 3–4 minutes. Set aside.
03 - In a small bowl, whisk together all burger sauce ingredients until smooth.
04 - Heat a clean, dry skillet over medium heat. Place one tortilla in the pan.
05 - On one half of the tortilla, sprinkle a layer of cheese, drizzle with burger sauce, and add about 1/2 cup of the beef mixture.
06 - Fold the tortilla over and cook for 2–3 minutes per side, until the tortilla is golden brown and the cheese is melted.
07 - Repeat with the remaining tortillas and filling.
08 - Slice each quesadilla into wedges and serve with extra burger sauce and pickle slices if desired.

# Additional Notes:

01 - For extra cheesiness, add a little more shredded cheese inside each quesadilla.
02 - Feel free to add chopped cooked bacon, jalapeños, or sautéed mushrooms for variations.
03 - Use gluten-free tortillas if necessary.
