In a large skillet over medium-high heat, cook the ground beef, breaking it up as it browns.

Drain any excess grease. Add diced onion, salt, and pepper. Cook until onion softens, about 3–4 minutes. Set aside.

In a small bowl, whisk together all burger sauce ingredients until smooth.

Heat a clean, dry skillet over medium heat. Place one tortilla in the pan.

On one half of the tortilla, sprinkle a layer of cheese, drizzle with burger sauce, and add about 1/2 cup of the beef mixture.

Fold the tortilla over and cook for 2–3 minutes per side, until the tortilla is golden brown and the cheese is melted.

Repeat with the remaining tortillas and filling.

Slice each quesadilla into wedges and serve with extra burger sauce and pickle slices if desired.
