Cauliflower Tacos Zesty Slaw (Print Version)

# Ingredients:

→ Roasted Cauliflower

01 - 1 large head cauliflower, cut into bite-sized florets
02 - 2 tablespoons olive oil
03 - 1 teaspoon smoked paprika
04 - 1/2 teaspoon ground cumin
05 - 1/2 teaspoon chili powder
06 - 1/2 teaspoon garlic powder
07 - 1/2 teaspoon salt
08 - 1/4 teaspoon freshly ground black pepper

→ Slaw

09 - 2 cups finely shredded red cabbage
10 - 1 medium carrot, grated
11 - 2 tablespoons chopped fresh cilantro
12 - 2 tablespoons lime juice
13 - 1 tablespoon olive oil
14 - 1/2 teaspoon salt

→ Spicy Sauce

15 - 1/2 cup sour cream or Greek yogurt
16 - 1 tablespoon mayonnaise
17 - 1 tablespoon lime juice
18 - 1–2 teaspoons hot sauce, to taste
19 - 1/2 teaspoon smoked paprika
20 - Pinch of salt

→ Assembly

21 - 8 small soft corn or flour tortillas
22 - Lime wedges, for serving
23 - Additional fresh cilantro, for garnish

# Steps to Follow:

01 - Preheat the oven to 220°C. Line a baking sheet with parchment paper.
02 - In a large bowl, toss cauliflower florets with olive oil, smoked paprika, ground cumin, chili powder, garlic powder, salt, and black pepper until evenly coated.
03 - Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Roast for 25–30 minutes, stirring halfway through, until golden and crisp at the edges.
04 - While cauliflower roasts, in a medium bowl, combine shredded red cabbage, grated carrot, chopped fresh cilantro, lime juice, olive oil, and salt. Toss well and set aside.
05 - In a small bowl, whisk together sour cream or Greek yogurt, mayonnaise, lime juice, hot sauce, smoked paprika, and a pinch of salt until smooth.
06 - Warm tortillas in a dry skillet over medium heat or wrap in foil and heat in the oven for 5 minutes.
07 - Fill each tortilla with roasted cauliflower, top with prepared slaw, and drizzle with spicy sauce. Garnish with extra cilantro and serve with lime wedges.
