Caprese Pesto Grilled Cheese (Print Version)

A vibrant melt featuring mozzarella, tomato, and basil pesto on crispy toasted bread, perfect for a quick meal.

# What You’ll Need:

→ Dairy

01 - 4 oz fresh mozzarella, sliced

→ Vegetables & Herbs

02 - 1 large ripe tomato, sliced into rounds
03 - 2 tbsp fresh basil leaves (optional, for garnish)

→ Spreads & Condiments

04 - 2 tbsp basil pesto

→ Bread

05 - 4 slices rustic or sourdough bread

→ Other

06 - 2 tbsp unsalted butter, softened
07 - Salt and freshly ground black pepper, to taste

# How to Make It:

01 - Spread 1/2 tbsp of butter evenly on one side of each bread slice.
02 - Place two bread slices on a clean surface, buttered side down.
03 - Spread 1 tbsp of basil pesto on the unbuttered side of each bread slice.
04 - Top each pesto-covered slice evenly with mozzarella slices, then add tomato rounds. Season lightly with salt and pepper.
05 - Cover with the remaining bread slices, buttered side facing outward.
06 - Heat a nonstick skillet or griddle over medium heat.
07 - Place sandwiches in the skillet and cook until bread turns golden brown and crisp, about 3–4 minutes.
08 - Flip sandwiches and cook until the opposite side is golden and cheese is fully melted, about 3–4 minutes more.
09 - Remove from heat, let rest for 1–2 minutes, slice in half, and garnish with fresh basil leaves if desired.
