# How to Make It:
- Preheat the oven to 350°F. Grease a small baking dish or line a baking sheet with parchment paper.
- In a bowl, combine cornmeal, all-purpose flour, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk buttermilk, egg, and melted butter. Fold wet ingredients into dry until just combined. Pour into a greased 8-inch baking pan and bake for 15 to 18 minutes until golden and set. Allow to cool, then crumble 1 cup for the filling.
- Heat olive oil in a skillet over medium heat. Add celery, red bell pepper, green onions, and garlic. Sauté for 3 to 4 minutes until softened, then remove from heat.
- In a large bowl, gently mix lump crab meat, crumbled cornbread, sautéed vegetables, mayonnaise, Cajun seasoning, lemon juice, cayenne pepper if using, parsley, salt, and black pepper. Stir carefully to avoid breaking up the crab.
- Slice rolls lengthwise without cutting through. Hollow out some interior bread to create space for stuffing.
- Fill each roll generously with the crab and cornbread mixture. Arrange on the prepared baking dish.
- Brush tops of rolls with melted butter.
- Bake rolls for 10 to 12 minutes until golden and heated through.
- Serve warm, garnished with additional parsley if desired.
