Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together flour, baking powder, baking soda, and salt.

Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.

Gradually add buttermilk, stirring just until dough comes together. Do not overmix.

Turn dough onto a floured surface. Gently pat into a ¾-inch thick rectangle.

Fold the dough in half and pat it out again. Repeat folding 2–3 times for flaky layers.

Cut biscuits using a 2½-inch round cutter. Place on the baking sheet with edges just touching.

Bake for 12–15 minutes or until golden brown on top.
